In a bid to serve better-quality food on board, the Indian Railways plans to set up its own Master kitchens in Delhi and Mumbai within two years. "1.5 lakh meals are provided on trains every day on outstation trains at Mumbai and Delhi. We have base kitchens with a capacity of 15,000 meals only, which is less than the requirement. So we intend to set up Master kitchens. We expect the project to be completed in two years," Chairman of Railway Board, Vivek Sahai, told reporters here. Admitting that cleanliness and quality of food had been below par, Sahai said, "Complaints about the quality of food served in trains were increasing and IRCTC was not addressing them properly.

Now Railways will take care. With such kitchens, we would be able to maintain quality. Food will be prepared under strict monitoring of the Railway Board and meals will be served on trolleys." Indian Railway Catering and Tourism Corporation Ltd (IRCTC), a PSU, is currently  responsible for serving food on trains. Sahai further said, "For Delhi we intend to use the equipment including utensils that were meant for the Common Wealth Games.
